Finely slice the shallots, garlic, green chillies, ginger, and the white part of the lemongrass. Zest and juice the lime. Roughly chop coriander and Thai basil leaves.

Heat olive oil in a pan over medium heat. Add the shallots, garlic, chillies, ginger, and lemongrass. Sauté for 2-3 minutes until fragrant and soft.

Add coconut milk, fish sauce, lime zest and juice, salt, and black pepper to the pan. Stir and simmer for 5 minutes to blend the flavors.

Gently nestle the cod fillets into the sauce. Cover and cook for 7-8 minutes, or until the fish is opaque and flakes easily with a fork.

Serve the cod in shallow bowls, spooning over the coconut and lime sauce. Top with chopped coriander and Thai basil. Serve with extra lime wedges on the side.
